Take your grilling to the next level. Rent a large, vertical smoker from Circus City BBQ!
Nothing screams BBQ like a slow, smoked piece of meat over a long-cooking bed of coals and wood.
But, not everyone has access to a quality, well-built smoker capable of producing even heat for several hours.
TIPS FOR SMOKING:
Keep your heat managed by using the vents/grates to regulate air flow. Smoking should be done between 175-225 degrees.
Start your smoker with charcoal and occasionally add pieces, if you see it burning low.
Don't use too much wood! Too much smoke produces an "off flavor" or "dirty smoke". After the initial lighting, you should be seeing small plumes of smoke if any at all.
6 hours of smoke is plenty for most people - Finish the cook in the oven, if you don't want to man a fire all night.
Wrap your meat after it hits the "stall temp". This is roughly 165-175 for briskets and pork.

BBQ RENTAL RATES:
Vertical Smoker - $75/day
Pig Roaster - $150/day
"Day" is a 24-hour time period. Drop off is 24 hours following scheduled pickup.
For example, if the scheduled picked is 8am, the return drop off is 8am the following day. Each hour passed the return time is charge an additional $5/hour.
There is a $50 cleaning fee if a smoker/roaster is returned and not cleaned of charcoal and residue.
